Week 3, Day 4

Today was the first day of working out after work. I got up at 6:15, showered, let my hair air dry while I ate breakfast and had my quiet time, then finished getting ready for work. 

The last day of the month is always crazy for me, trying to get all my stuff in before the end of the month. Today was no different. I barely got up from my desk all day (hence the low step/mileage count) but I got it all done!

While I was at work, I got an email from a guy wanting to buy our last piece of furniture. We agreed on a price and decided to meet tonight to drop it off, so we weren't able to go to the gym after work like we planned. I was actually kinda bummed! 

The one bad thing about working out at night is that you can plan your food for the day thinking you're going to work out, but if something comes up (like tonight) you end up eating more calories than you actually needed for the day. 

Tomorrow we're planning to go to Telos after work again, so hopefully it actually happens! I think it will be a really good routine.

Week 3, Day 3

09/29/13

I think we used a quarter tank of gas driving today. We went from Allen to Frisco (for church) to south of downtown (for family day at the zoo!) to Walmart in Allen then back home. Then back to Frisco for a membership class at church then back home. 

We also did a ton of walking. We took Bula on a walk before church, we walked all over the zoo, and we took ANOTHER walk with Bula after dinner! Whew!

Week 3, Day 2

Today was the dreaded Saturday I had to work. I'm in a group of three teams that rotate Saturdays, so every third Saturday I have to work. The good new is that I get the following Friday off (yay three day weekends!) but the bad news is I have to work on Saturday...

Luckily, I usually get to leave at 5:00 on Saturdays. After work, I went home to get Joel and we headed to Uptown for date night at Max's Wine Dive! That was cheat #1 for the week. 

We got home around 9:00 and I went straight to bed! (See yesterday's post about being old at heart...)

Week 3, Day 1

09/27/13

Fridays are rest days, so we slept in a little later than normal. There may or may not have been a 90 pound dog that snuck in our bed for cuddles... How do you say no to this face?!


We left the house about half an hour earlier than normal and had a last minute Starbucks date! I recently discovered that I do, in fact, like the Pike roast so I got a normal coffee instead of my usual latte. 

We walked two laps (1 mile) around the mall (with all the other mall walkers) while we drank our coffee. We were definitely the youngest mall walkers by at least 35 years... I can't wait to be one of them. What a life, right?

Lunchtime called for another trip to the mall to walk with Joel. I'm telling you, we're at least 60 years old at heart. 

After work, we ran through the drive thru at Chick-Fil-A and headed to use our Studio Movie Grill groupons to see "Prisoners" - it was really good, but REALLY creepy. I don't need to ever see it again.

Week Two Results (What I've Learned)

Here's what I learned from my failed week two:

1. I'm not motivated by prior success. Week One, I lost almost 2 pounds. Most people would use that as further motivation to keep going. Not me. I somehow turn it into an excuse that I don't have to work as hard next week. Because that makes total sense, right?

2. I don't like to work out in the mornings as much as I thought I did. In college, I always worked out in the mornings before class and I loved it. And I think I still would if I didn't have to go to work every day. But in college, I had a solid 2-3 hours each morning to leisurely work out and slowly shower and get ready. To do that now, if have to get up around 4:30am. Now I'm a morning person, but that's too much. Plus, Joel wouldn't go with me and that leads to number 3...

3. I don't like to work out alone. If I don't have someone else there to push me and encourage me to work out, I just won't do it. In my case, I was trying to get up in the mornings and run before work. I know Joel *hates* running, so I feel bad asking him to go with me. And about half the time, we don't go and I don't work out at all. 

4. I prefer working out at a gym. And we have a free membership to a fancy schmancy gym. Why am I not using it?! Joel and I decided that we are going to start working out after work. That way, we won't have any time restraints (like trying to finish so we can shower and go to work) and we can get our workouts done. Because of this, we're less likely to skip them. We will get home a little later than we're used to, but it won't kill us. Plus, my schedule should be changing soon and I'll get off work earlier. 

5. I like to snack. But snacking can lead to hundreds of extra calories a day. It's just something I have to be diligent about, because there's ALWAYS something to munch on at GEICO. Just because I include it in my daily calorie count doesn't mean I should eat it. (Read: tootsie rolls). I've got to focus on eating the right KIND of calories too, not just the right AMOUNT. 

So there you have it. I'm always learning, always adapting. My "plan" will have to change to address my weaknesses if I want to make any progress, so that's what I'm trying to do.

Week 2, Day 7

09/26/13

This morning, I got up at 6:15 again to take Joel and Bula on a run. I don't know why I except it to be any different than it always has been before, but every time I start running again I'm always SO SURPRISED at how out of shape I am! Out of *running* shape, I should say. I think I'm in shape from working out on the elliptical, but being "in shape" and being "in running shape" are completely different things!

All that to say, we're still at one mile, and it still takes 9-10 minutes... Better than nothing, I guess. 

I had my first "official" cheat today! If the calories fit within my 1200 net calorie goal for the day, I don't consider it a cheat. A cheat is something I don't have to count the calories on. And today I had my first official cheat - a cinnamon roll sugar cookie bar with cream cheese icing. YUMMMM!! 

I made them last night, and the smell coming from the oven was about enough to send me into a sugar coma. There are not many scents I love more than cinnamon!

They were pretty easy to make. I think I baked them too long because the consistency is more like that of cake than of cookies. Next time I'll pull them out earlier. They're still delicious though!!

Week 2, Day 6

09/25/13

I got up at 6:00 determined to work out. I had already skipped two days this week! Joel and Bula followed me so we all went on another short and slow walk. We ran down to the fire station and back and even had to shine the flashlight on my phone because it was so dark outside!

We got back, showered, and got ready for work by 7:15, which gave us over an hour to eat breakfast, drink coffee, and spend time in the Word. The mornings that start that way (versus the ones with no exercise, too many snooze cycles, rushing around, and no quiet time) really start the day off right. It's just special and refreshing. 

Work was uneventful, but when we got home we discovered Bula had made his second kill... Poor little guy. You'd think these bunnies would learn not to come in our yard anymore! I took a picture of the remains (sans head that I'm pretty sure Bula ate) and sent it to my mom. Based on her reaction, it's probably something I shouldn't share here either. You can thank her for sparing you the gory details. 

After that (thankfully less emotional than last time) ordeal, we cleaned up, ate dinner, and started Breaking Bad on Netflix while I made dinner for the next day. 

I used my momma's recipe and made chicken tortilla soup. It is soo good!

Here's how you do it:
• Cook 2 pounds of chicken (I used breast meat only and boiled it). While chicken is boiling...
• Dice 1 small onion and 1 jalapeño and sauté with 2 cloves minced garlic, a 4-oz can of green chiles with the juice (I used the big 7-oz can because we love green chiles), and 2 tablespoons olive oil. Dump in a large pot/Dutch oven. 
• Add 1 can diced tomatoes, 1 can tomato soup, 1 can Rotel, 1 can beef broth, 1 can chicken broth, 2 cups water, 1 heaping teaspoon cumin, 1 heaping teaspoon chili powder, 1 teaspoon salt, and a handful of chopped cilantro (if it's in season). 
• When chicken is done, shred and add to the pot as well. Cook on medium heat for an hour, adding water as necessary. 
• Serve with avocado, cheese, and tortilla chips. Enjoy! (Hint: it's better the next day, so make the day before.)

I also made a dessert, but more on that next post.

Week 2, Day 5

09/24/13

I fully planned on working out today. I was going to go to yoga again at Telos, but then I had a last minute Craigslist deal come up and had to meet the lady before work. Selling bedside tables is important work, okay? 

Also I updated my phone Monday night, not realizing I would have to restart my phone when it was done. Which meant my alarm didn't go off at 6:00 like I planned so I could go run. Instead I woke up at 7:00, quickly got dressed and ready for work, and rushed out the door at 7:45. Not too shabby. 

After a relatively boring day at work, Joel and I came home and immediately sat down in front of the computer to watch the series finale of Dexter. 

I don't want to ruin it but...
Oh. My. Word.

I cried. A lot. After the show was over. I just kept crying. Then we watched How I Met Your Mother, and I felt much better.

Week 2, Day 3

This weekend must have been dubbed "project weekend" and we didn't know it but couldn't help but follow along. After our flag pole installing and house number painting adventure yesterday, I was in the mood to be creative!

So I made a fall wreath. We bought the stuff at Hobby Lobby yesterday (at 40% off, I might add) and I assembled today while watching football. 

First, I cut all the pine cones and branches and flowers off the main stems into smaller pieces to work with. I would recommend doing this as you go rather than all at once up front, because I ended up not using it all and could have returned some if I hadn't cut them up. Lesson learned. 


Then I just started hot gluing branches and berries where I thought they'd be cute! I did all the pine cones first, then the little leafy stems, then the berries, then the big leaves, then the flowers, working around in a circle for each one to make sure it was evenly spaced out. Lastly, I tied on a big burlap ribbon and hung it on the door with a command hook! Easy peasy!

It cost about $20-25 and only took about an hour!  Way better (and cuter, in my opinion) than any of the pre-made store-bought wreaths that sell for several hundred dollars!

After craft time, it was Craigslist time. We have a whole room full of furniture and electronic equipment we don't use so we figured we may as well try to make a little money. Our goal is to make enough to buy a new MacBook Pro, so if you're in the market for new stuff check out my listings on Facebook! And finally, it was shopping time! We went to the outlet mall to get me a plaid button up shirt to wear with my new navy vest, and I found a super cute one at J. Crew! We hit up Taco Cabana again on the way home so Joel could have 35 cent bean and cheese tacos one last time...

Then we headed downtown for the Maroon 5 concert! We were an hour and a half late, so we missed the opener (on purpose) and caught the end of Kelly Clarkson. She was actually really entertaining! Maroon 5 was also great! It was a really fun show. Definitely more for me than Joel, so I owe him.

Week 2, Day 2

Today was an errands running day. We slept in a bit, but Bula kept whining until we got out of bed around 7:45am. 

Our first stop was Starbucks (a Saturday morning Palmer ritual) for breakfast. After a quick run in Super Target, we swung by Taco Cabana for breakfast for Joel. It's their 35th anniversary so they're selling bean and cheese tacos for $0.35 each at all stores in Texas and Oklahoma! Naturally, Joel got four. 

We hit up Hobby Lobby after that and got supplies to make a fall wreath. I'm hoping to make it tomorrow! I'll post pictures if I do. 

Last stop was Lowe's. We had to get a few small things to hang our flag pole and we browsed new front doors like we do every time we go in the store. 

When we got home, we each started our respective projects: Joel installed the flag pole, and I repainted the numbers on the front of our house. 


Yes, he had to drill into the brick. It took forever!!! But well worth it, in my opinion. Look how cute our flag is! We've had it about a month and just never got around to hanging it up.

After our projects were finished, we headed down to Addison for Oktoberfest with friends. And that's where the trouble started. Turns out, Oktoberfest is also part fair, including all the yummy fair food. My one indulgence was red velvet funnel cake with powdered sugar and cream cheese icing. I split it with Joel but probably still had 400 calories worth. 

With all the walking we did (almost 7 miles!), I ended up less than 400 calories over my allotment so I'm calling the funnel cake cheat #1 for the week. 

We watched the Tech game with friends then called it a night! Pretty good Saturday if you ask me.

Week 2, Day 1

I'm running my weeks Friday to Thursday, so Friday September 20th was day one of week two. 

I was good pretty much all day, and even passed on Raising Cane's with my team! One of my associates got promoted, so we had a going away lunch for him. I went to pick up Cane's for everybody and had to smell it in my car the whole way back to work. I may have accidentally eaten a chicken finger and a few fries... But I brought my lunch and I ate it instead!

I did have a small piece of cake tho... The adjuster who got promoted went to culinary school before coming to GEICO and he made us a gingerbread cake with sweet potato buttercream - his own recipe! And it was DELICIOUS. 

Friday is a rest day, so no working out. Just happy hour after work, frito pie for dinner, and watching The Big Bang Theory with Joel and Bula!

We love the weekend!

Week 1, Day 4

Last night was the Big Brother season finale! I won't spoil it for those of you who haven't seen it yet, but I was pleased with the results :)

Unfortunately, that meant I didn't go to bed until 10:30 last night. I set my alarm for 6:15 knowing I'd hit the snooze button several times and probably get up around 7:30 (leaving just enough time to shower and get ready for work).

I woke up this morning feeling like I needed to work out. If I'm serious about wanting to lose weight, I have to exercise more days than I don't. Since I took yesterday off, I knew if I took today off that I would also take tomorrow off, leaving me with only two exercise days this week. 

So after snuggling my pup who for some reason was sleeping in my bed, I pulled myself out of bed at 7:00, still debating if I should try to squeeze in a quick run or just have a leisurely morning before work. 

My aunt sent me a new running shirt for my birthday and it was sitting on my dresser staring at me, so I decided today would officially start my Turkey Trot training! Joel got out of bed and came with me too without me even asking! If you know Joel, you know he HATES to run so this was a big deal. 


I clipped on Bula's leash and we headed out! The Turkey Trot is on Thanksgiving Day and it's 8 miles long. I'm planning to have Bula run with me, and I have to condition him to running on a leash so I started out slow and short with a 10 minute mile. I think next time we can pick up the pace and go a little further because he wasn't even tired when we got back! I think he's in better shape than I am...

Week 1, Day 3

Today, I slept in until 7:45. And it was glorious! My hamstrings and shoulders/ arms are SO SORE from yoga yesterday! Which apparently is what happens when you go from not working out at all for months to working out hardcore two days in a row. I gotta keep at it! I just needed a day off. 

I find that I get hungry the most in the afternoons, so today I made a plan to combat that. My mornings are busy at work so I don't usually need much by way of a morning snack. Today, I planned out my snacks and lunch and have myself plenty of small snacks throughout the afternoon. And it worked! I wasn't tempted by the candy in my drawer or the cake in the section next to me. Looks like a good plan going forward!



What I Ate:
Breakfast:
- 8:30am Zone Bar (210 cal)

Morning Snack:
- 10:30am fruit strip (45 cal)
- 12:50pm unsweetened applesauce (50 cal)

Lunch:

According to my fitbit, I was only allowed 1074 calories. Oops... Guess I should work out tomorrow. Nonetheless, I am still proud of how I did eating-wise today!

Week 1, Day 2

I worked out again today for the second day in a row! I got up at 5:00 this morning and headed to the gym for a 6:00 yoga class. It kicked my butt! I'm planning to make that my routine Tuesday workout. 

What I Ate:

- 1/4 cup walnuts (200)

Lunch: 
- Raising Cane's - 1 finger, 1/2 box fries, 1/2 slice of bread, 1/2 container sauce (328)

Total: 1238 calories 

I forgot my fitbit at home today so I don't know exactly how many calories I burned, but do know I burned about 200 more calories in yoga this morning than I did in my workout yesterday. Other than that, my activity level was pretty much the same as yesterday so I figure I would have been allotted 1360 calories today. 

Even though I was in my calorie range for the day, I did still cheat. So I'm counting Cane's as Cheat #1 and the tootsie rolls as Cheat #2.

I'm still trying to figure out how I want to handle my cheats. I know I'll be able to justify days like today where it's technically in my calorie range, but I don't want to fall into that trap, so from now on I'm calling each individual food product a cheat. 

For example, I had 3 tootsie rolls today so that would count as 3 cheats. I had a piece of bread at lunch, so that would be a cheat. I also had processed fries and processed deep-fried chicken, which would count as 2 more cheats. 

I've got one more cheat to last me through Friday. I'm planning to make Fridays my weigh in days, so this week will be a short week.

Week 1, Day 1

This morning, I worked out for the first time in months. Yes, you read that right. I drug myself out of bed at 6:15 to go to the gym before work. 

I'm adding weight training to my normal cardio-only routine. I certainly don't want to bulk up, but I had a great routine in college that really helped me tone up in under half an hour each day. Each day focuses on two body parts, with three exercises each. Today was back and biceps, Wednesday will be chest and triceps, and Thursday will be legs and shoulders. 

The back exercises I do are the lat pull down (machine), seated compound row (machine), and one arm dumbbell rows. For biceps, I do curls, first with individual dumbbells and then with a barbell. I do three sets of 12 reps of each exercise with a 30 second rest in between a sets. 

After I did my weight training, I jumped on the treadmill for a quick mile then hit the shower before work! Thankfully our gym is really nice so I don't really mind getting ready there in the mornings.

- 1/2 chicken breast (90 cal)
- 1/4 russet potato (73 cal)
- baby carrots (29 cal)
- 2T Italian dressing (70 cal)

I made dinner in the crockpot today so it was ready right when we got home. All I did was put 3 large chicken breasts on the bottom of the crockpot, pour a bag of baby carrots over the chicken, and roughy chop up 2 russet potatoes to put on top. I salted and peppered the potatoes (and wish I would have done the same for the chicken and carrots) then poured 2 cups Italian dressing over everything and turned it onto low right before we left. It ended up cooking for 11 hours, which was probably a little too long. 

It wasn't great, but it was easy enough that I'll probably still make it again. Next time, I'll experiment with different spices for the chicken and vegetables, as it was a little bland this time. 

Based on my activity level today, I was allotted 1160 calories and I consumed 1142. I also drank 121 fluid ounces of water!

Day 1: success!

Starting Over (Why Paleo's Not For Everyone)

It's been 9 weeks since I delved into the Paleo world. While I did find some benefits, it's not for me. 

Paleo Benefit #1: Better Sleep
I have always been a light sleeper. I usually toss and turn all throughout the night. Every time I would wake up, I would look at the clock, which only made it worse. I got a fitbit which has a sleep tracking function, and I found that I actually wake up an average of 24 times a night... That's insane. 

Paleo actually did help me sleep better. I decided to stop looking at the clock when I woke up, which helped me fall back asleep faster. I also found myself waking up far less often, with many more nights where I slept the entire night. 

Paleo Benefit #2: More Energy
Ever since I went to college, I have always been a coffee drinker. Every morning, I have at least one cup of coffee. It was just how I started my day. For a long time, I thought I needed it to function. In reality, it was more of a habit than an addiction. 

When I went Paleo, I had to cut out coffee because I only like coffee with processed, sugary, dairy filled creamer and Splenda. When I cut out coffee, I found that I actually had MORE energy! I didn't need the caffeine to survive, and my natural-morning-person personality kicked in. I started each day with plenty of non-caffeine-induced energy!

Typical Paleo Benefits I Didn't Experience
1. Clearer Skin
- I have never really had skin issues anyways, so I didn't expect to see a change in my skin. And I didn't. 

2. Less Headaches
- I've just got issues in this realm. My primary doctor has treated me, I've got to a neurologist, I have a bajillion prescriptions... Yet I still have headaches entirely too frequently. That's a completely different topic, but my point is: Paleo did NOT help with my chronic headaches. 

3. Weight Loss
- This is the big one. This is the main reason I decided to give the Paleo lifestyle a try. To be honest, the biggest draw was the fact that I didn't have to count calories. As long as you're eating Paleo approved foods, you can have as much as you want! The bad news is I was still trying to lose weight, and by rule, it is physically impossible to lose weight when you consume more calories than you burn. 

Here's what I did wrong when approaching Paleo as a weight loss diet:
Eating too many calories (even though they were Paleo approved foods). I haven't NOT counted calories in so long, I was pumped to not have to anymore! I just took it too far. Almond butter is good for you - in moderation. Unfortunately, I only paid attention to the "good for you" part and ignored the "in moderation" part. 
Eating too few vegetables. One of the biggest components of a Paleo diet is fresh vegetables and leafy greens. I ate neither. The only vegetable I really like is green beans, which is ironically not technically Paleo. I wasn't eating enough vegetables, and instead, I was...
Eating too many fruits. Fruit is also good for you - in moderation. I love fruit! What I love about fruit (and what pushes it towards the "unhealthy" range) is that is it full of natural sugar. A banana or an apple is good, but a banana and an apple and strawberries and applesauce and a larabar (made of dates and other fruits and nuts) EVERY SINGLE DAY is not. Unfortunately, that's exactly what a typical day looked like for me. 
Not working out. Anyone knows you can't lose weight without working out. Especially when you're eating a diet filled with sugary carb-loaded fruit and unnecessary amounts of nuts and nut butter. When I went Paleo, I quit working out. I have no idea why, but I did. 

So where do we go from here?
I woke up this morning, stepped on the scale, and weighed in at 142.0 pounds. That puts my BMI at 23.7 ("healthy" is 18-25, ideal is around 21). 

I still have a weight goal of 125 pounds. I weighed 126 pounds on my first day of college and 128 pounds on my wedding day, so I know this is a healthy weight for me. I'm more concerned with how I look than the number on the scale, so that will be my guide rather than just my weight. 

Here's my plan to get there:

1. Eat a modified Paleo diet. 
I like the premise of Paleo. The problem for me was that I cut out healthy dairy snacks (an ounce of cheese) and replaced it with sugar-loaded fruit (larabars, bananas, apples) and too much fat (500 calories worth of almond butter a day).

What I'll Keep:
• (Mostly) no grains.
• No sodas or alcohol. 
• Nothing processed (except breakfast bars such as Zone Bars or Balance Bars).

What I'll Change:
• Add dairy back in. I won't eat dairy as a condiment (a slice of cheese on a burger, shredded cheese on taco salad, etc.), but I will add back healthy dairy snacks. I'll eat cottage cheese instead of Lara bars, and an ounce of cheese instead of another apple with almond butter. 

• I'm also giving myself 3 cheats a week. Not 3 cheat DAYS. Not even 3 cheat MEALS. Just 3 individual cheats a week. This could be a beer with dinner, dessert, or a slice of bread. If I go out to eat and have bread, pasta, and dessert, I blew through all 3 cheats in one meal. 

2. Work Out!
I'm cracking down on the exercise! I'm planning to start running again, and have a schedule to work up to 8 miles by Thanksgiving. I'm also adding in yoga once a week and weight training three times a week. 

3. Stop Making Excuses
There's a saying I've seen all over the Internet lately that will become my mantra. 

"If it's important to you, you'll make the time. If it's not, you'll make an excuse."

4. Hold Myself Accountable
I'll be tracking my daily caloric intake and exercise, and to lose the weight I want, I need a 1000 calorie deficit each day. I'll track it on my fitbit app and post it here. 

My health WILL be important to me. I will work hard, eat right, and hold myself accountable for my results. God willing, I should be at my target weight by Thanksgiving.

Paleo Pancakes Reprise

Paleo Pancakes made a brief cameo in my second ever post, but today they're the star of the show! Step-by-step photos included.  

I mentioned before that they were time consuming, and that's still true, but I think I've got it down pretty well now. 

Step 1: Preheat a small skillet over medium heat. I let mine heat up while I did my hair. 

Step 2: Mix one very ripe banana and two eggs with a hand mixer (or in a food processor if you want it to make cleanup more difficult...) in a small bowl until smooth. Get the banana as completely mashed as possible. 


Step 3: Using olive oil spray, grease the pan before each batch. 


Step 4: Pour just a *little* of the batter in the pan. This batter is really thin so a little goes a long way. One batch makes about 5-7 small pancakes. 


Step 5: Let it cook for only about 5-10 seconds then start working on the sides with a spatula. Since it's so thin, the pancake is hard to flip. Practice makes perfect! But don't try to flip it sans spatula like the pros... Trust me, you'll just make a mess and sacrifice an otherwise perfectly good pancake. Or two, if you try it twice. Not that I did that. 

Step 6: Make another batch when your husband wants some too. 


Step 7: Serve with honey, maple syrup, or coconut spread. I chose the latter. YUMMMM!


Step 8: Head to Starbucks to study before work because you're a procrastinator and still have 6 chapters to read and learn before your test tomorrow.

Full Dinner Casserole

Joel actually made this dinner for us. He even commented that he couldn't believe how simple it was!

All you need is chicken breasts, a can or two of green beans (I like Italian cut), potatoes of your choice, a bag of frozen baby carrots, a packet of Italian seasoning (or use your own spices), and Italian dressing or butter!

We planned to have leftovers, so we bought 6 chicken breasts and cut them in half lengthwise (the ones at Market Street are always HUGE). We also used 2 cans of green beans and 2 or 3 red potatoes. I'm going to try sweet potatoes next time. We divided it all between three 9x9 disposable baking dishes, and froze them for later. Each dish will feed Joel and I dinner twice (or dinner once and leftovers for lunch the next day or two).

You literally dump it all in a casserole dish. I don't like my food to be mixed up, so I put the chicken breasts down the middle and put carrots on one side, diced potatoes on the other. I was planning to put the can of (drained) green beans on the outside next to the potatoes but I ran out of room so I just put them on top of the chicken. 

I covered everything with the Italian seasoning (and put a LOT on the chicken before I covered them with green beans). I also added extra garlic powder bc I LOVE garlic! Fresh garlic and herbs would also be fantastic. 

We actually made this a couple days ago, so we froze it since we weren't ready to eat it. My advice if you do that is to get a pan with an actual lid. We used a disposable baking dish but it didn't have a lid. I used plastic wrap and foil, but it still got little ice crystals on the food. 

I pulled it out last night and put it in the refrigerator to thaw. When I was ready to make it tonight, I preheated my oven to 350, covered the entire dish with Italian dressing (you can also use a stick of melted butter if that's your thing) and baked for an hour!

Week 5? Week 6? Or something like that

Okay, I lost track. I fell off the wagon. And I definitely have been a bad little paleo girl!

Long story short, I weighed the same on 8/26 as I did on 8/20 and I weighed the same on 9/2 as I did on 8/26. That's what happens when you cheat too often and don't work out. 

So I'm going to be starting fresh. I'm going to be posting entirely too much information regarding my food and exercise habits (gotta keep myself accountable somehow!), and (fingers crossed) will be working out a lot more. My work schedule should change soon, and it will be more conducive to a routine workout schedule. Until then, I'm trying not to make excuses. I need to just suck it up and do it.

Paleo Taco Salad

Tonight was another super quick and easy meal in the Palmer household!

I made this entire meal in about 15 minutes. It was so quick and easy, I didn't even think to take step by step photos. 

Instructions:

Dice half an onion. Sauté half of the chopped onions. Add 1 pound ground beef (I used 97/3%) and brown until cooked through. 

While meat is browning, make the guacamole. Mash up 3 avocados in medium bowl with a lid. Add the other half of the diced onions to the avocado, along with a diced jalapeño, a couple tablespoons chopped cilantro, and the juice of half a lime. Mix well. Add salt and garlic powder to taste. 

Be sure to keep an eye on your taco meat! Once it's browned, add taco seasoning. 

Cut a head of iceberg lettuce into fourths. You only need 1/4 head of lettuce to feed two people. Chop up the lettuce and top with taco meat, guacamole, and salsa. Tadaaa! Taco salad in under 15 minutes. 

I made my salsa ahead of time, but you could easily make it too while the meat is browning. Roughly chop up two tomatoes, half an onion, half a jalapeño, and a tablespoon of cilantro. Add all to your food processor and blend until it's the consistency you like. Add garlic powder and salt to taste. Makes about a pint. I store mine in a mason jar in the refrigerator.
